VINIFICATION AND AGING: grapes are harvested by hand in the early morning hours, and in the late evening at the peak of their ripeness. After harvesting, it is quickly taken to the winery for pressing. The must and skins are chilled to 22°C and transferred to tanks for maceration. This process takes 12 to 15 days; then the wine is aged in wood for 6 months.
TASTING NOTES: Ruby red color shows elegant structure. Red berry fruit notes, such as black cherry and cherry, are evident on the nose. In the mouth it is fresh and balanced.
PAIRINGS: excellent with braised pork, grilled tuna, and strong pasta dishes. Excellent in combination with medium-fat cheeses.
